木下憲幸シェフの料理, チーズやバターをふんだんに使ったイタリア料理とは異なり. 木下シェフはイタリア滞在中に勤務したレストランの影響で、乳製品を極力使わないことが特徴です. 日本帰国後、大阪の名店「Due」でGVP(ガストロバック. 魚や肉の旨味を引き出す低圧調理法)を専門に学びました. その結果、木下シェフの料理は、爽やかでありながら豊かな風味を出てます.
また厳選された最高な食材を使用し、薪と炭で火入れされた魚介や、オーダーメイドの塩を使った肉料理など、素材の持ち味を最大限に引き出した料理が提供される.
お料理どれも素晴らしい. 最強の料理を選ぶのは難しすぎる. イクラ熟成米サラダ、生ハム松茸スープ、牡蠣黄色ニラバーニャカウダ、量が素晴らしいアンチョビ毛蟹など…..シャトブリアンステーキ….全て感動的な味わい.
また機会があれば 行きたいです. ご馳走さまでした.
