2024年BRONZE、2022年百名店に選出の鮨みずかみさんに初訪問。店主の水上さんは、すきやばし次郎で16年修行をされた方です。砂糖を使用しない、米酢と塩のみのしゃりで握るお鮨が絶品という記事をかなり前に読んだことがあり、伺ってみたいなとずっと思っていました。
ニューヨークから留学中の食べ友さんがもうすぐ帰国してしまうということで、その前にこちらのお店でご一緒したいとお誘いして念願の初訪問となりました。
今回はお昼のつまみ有りの28000円のコースをいただきました。

お鮨を語れる程の経験がないのですが、つまみもお鮨も、余計な物がいっさいない研ぎ澄まされたお味だなと感じました。水上さんから、うちのお鮨は、お塩もかなり抑えてあるので、食後に喉が渇くということがないと思いますとお伺いしましたが、本当に喉が渇くことがなく、食後の身体の軽さも印象的でした。塩味を極限まで抑えてあるのに、味に足りなさを全く感じさせない技術も凄いなとただただ感動しました。
お鮨の感想ではなくお店全体の感想なのですが、こちらに伺うと何だか運気が上がるような気もしました。全体の「気」がとても美しいのです。29日に伺ったので、余計に運気アップしたのかもしれませんが、帰り道で嬉しい偶然の再会もありました。
大好きな食べ友さんとの最後のお食事にぴったりな素敵なお店でした。また一年後に来日予定なので、その時をワクワクしながら待ちます。
