結論今年一番旨いもの食べました。本当に旨いもの食べた時って「うまっ」しか言葉が出てこない…
そもそも薪焼きとは?って全てが50歳にして初体験。
豪快だけではなく、繊細さもあり。水茄子の浅漬けは素材の甘みを塩昆布で引き立たせた一品。しっとり食感が病みつきに。ブロッコリーの薪焼きで薪料理の扉を開ける。薪の香りがブロッコリーに移り野菜の甘みと香ばしさに驚く。
生麩の薪焼きは本日MVPクラスの旨さ。パンパンに膨れた生麩は表面カリッと中はもちもち。そもそも生麩を食べる事が珍しいのに味つけはシンプル塩のみで言葉が出ないほど旨かった。おかわりしたかった…
鰻巻きは蒸してないので鰻の食感を楽しみつつ山椒かけて味を楽しむ。ここから肉の盛り合わせに入るのだが、薪料理の真髄が随所に垣間見える。牛タン、ミスジ、鹿肉、ラムチョップは素材自体が旨いのだが、肉質柔らかく、薪の香りで燻された肉達が劇的に生まれ変わり未体験の旨さに。肉により燻さ方や時間を変えているこだわり。
〆はとうもろこしバターの土鍋ご飯。シャキシャキ食感のとうもろこしはとにかく甘い。バターは香り程度なのだが米ととうもろこしの味が最大に引き出されている。
料理の味はもちろんだが、お店の雰囲気、ライブ感全てが異空間。目も舌も心も踊る薪料理でした。ご馳走さまでした。
