「これが一番旨いと思う」と大将の言葉。確かにこんなに柔らかな蛸は初めて。蛸の柔らか煮は今までも色々と食べたけど、一番の柔らかさ。
●イサキの玉子
プチプチではなくトロッとしてます。
●3日寝かせた4kgのヒラマサの刺身
脂が乗ってて旨味も濃い。

「内蔵が美味いので丸ごと食べて!」

●葉ワサビ
ツンとしたワサビの香りが強いのに美味しい。
●唐津の紫ウニと筋子の茶碗蒸し
●唐津の黒アワビの柔らか煮
これもまた、こんなに柔らかく煮られたアワビは初めて。決まった漁師が取ったアワビしか使わないと。なぜなら、このようにならないから。アワビがどんな餌を食べて育ったかが、料理にした時の違いがでるとのこと。ビックリです。
○惣誉 特別純米
●8kgの大きなサワラを軽く炙った刺身。
程よく脂が乗ったサワラとポン酢がちょうど美味しくなってます。

●アオリイカにカボスの風味の塩で
大将曰く、イカで寿司屋の腕が分かるとのこと。このイカと新しいカボスの組み合わせが最高。
○手取川 純米 大辛口
●赤ヤガラ
5.5kgと滅多にない大きな赤ヤガラを食べられるのは幸せとのこと。
脂は軽くて風味がしっかりしています。初めて食べたけど、美味しい。
●3kg超えの鹿児島の鯛
2日寝かせて身が緩んだのが良いとのこと。
○亀齢 辛口純米
● ナミクダヒゲエビ
鹿児島でしか取れない深海のエビ。甘エビに近い味わいだけど、もっと繊細な味。
●車海老
茹でたて。お客さんに一人一人秒単位で茹でる時間んを合わせるそう。
●メイチダイ
軽い脂に爽やかな白身の味わい。
○月山 芳醇辛口純米
●鯵
美味しい鯵とはこういうもの、と思えるような一切の臭みのなく、鯵の旨味だけが感じられます。
●天然縞鯵
小ぶりだからか脂ののりは軽いけど、旨味はしっかりあります。
●厚岸の牡蠣
火が入った牡蠣の握り。大将はあまり貝類は握らないらしい。
●筋子
○寒北斗 純米 超辛口
●スマ
小ぶりだけど脂の乗ったスマはマグロに負けない美味しさがあります。
●ウニご飯
トロけるウニとご飯が最高。
●3日寝かせたハガツオ
爽やかな香りで食べられます。
●3.8kgの太刀魚
火を入れた太刀魚は柔らかくて暖かくて香りが出ています。
○防長鶴 純米 超辛口
●穴子
塩で食べる穴子。穴子の味を直接味わうためにタレは使わないと。
●最後に生姜と二十日大根
○残心 超辛純米
ツマミ、握り、お酒、どれも間違いなく素晴らしい。地物にこだわっているのも、嬉しいですね。料理には一つ一つ説明があって、それもまた食べるのに興味がでます。お酒もここまで多種類を出してもらったのは、人生初のことでした。その都度嫌な顔せずに瓶も見せてくれて、そういうサービスもありがたかったです。
これだけ食べて飲んで、3万円でした。値段以上の価値があります。また鹿児島に来るときがあれば、絶対再訪します!
