仙台寿司ローテーションの1つ。
何回も書きますが、大将と話ができるカウンターが良いです。
まずはシロウオ(ハゼの子供)の踊り食い。
元気が良すぎて口の中で暴れます。
シラウオとシロウオは魚の種類が違うという事を教えてもらいました。
他にも珍しかったのがホワイトエビ。
ホワイトエビ、ブラウンエビ、ブラックタイガーとあって、ホワイトエビは味は良いけど色見が弱いので最近はあまり入ってこないのだとか。
今回の江戸時代の寿司はマグロと金目鯛。
マグロはぬかに漬けて熟成。金目は味噌に漬けて熟成。
焼き米の粉がかかって、これがまた美味い。
お任せが一通り終わったけど、お腹の調子が良さそうなので追加で2品注文。
コハダは桜葉で巻かれて、その風味が良い感じ。
ヤリイカには赤梅青梅白梅が添えられ見た目も楽しい。
いやー、相変わらず名店です。
