土曜のお昼に予約して訪問。満席でした。
ランチは握りのみで16,500円(込)。
11:30に一斉スタートなので注意が必要です。
この日は運良く大将の佐竹さんが担当。
序盤から大将が細かいネタで場を盛り上げてくれます(大将は場を作るのはお客さんだと仰ってましたが、それは大将の話が面白いから)。
コースの最初は蛤の茶碗蒸し。
蛤は塩味が強いので豆乳を入れているけど、それだと味がぼやけるので胡椒でエッジを効かせてるとのこと。
しょっぱなから、うめーです。
そこからは鮨ラッシュ。
とにかくネタもシャリも美味いけど、それはそれぞれに最適と思われる神業的な温度調整があるから。
特に感動したのがウニで、他店と比較して冷たいウニ、でもシャリは温かめ。
この組合せ最高でした。
ノドグロが海苔巻きになってたのも見た目だけでなく、ノドグロの脂と海苔の相性が抜群。
トラフグの白子と酢飯は、トラフグの白子を潰して酢飯と混ぜるとトラフグのリゾット風に変身。
どこかチーズの風味がする逸品でした。
あまりにも美味しかったので、追加で白えびを注文。
とびっこが入っていて、そのプチプチ感がたまらなかったです。
ちょっとお酒が高めな印象だけど、そもそもこのクオリティのコース料金としては立地条件含め素晴らしい。
