新宿駅高島屋そばにある寿司百名店の匠 誠。
幸い予約が取れたので平日夜に初訪問しました。
お酒は日本酒をお任せでお願いしました。
久しぶりに一斉スタートのお店です。
最初はお椀からでした。
蕪をすっぽん出汁で炊いたものですが、
このあたりは比較的オーソドックスに感じました。
しかし徐々に大将のホスピタリティというか、ペースに
そこにいたお客が取り込まれていっているように思いました。
大将の料理を紹介するときの独特の「口上」といいましょうか、
少し芝居がかったような表現にはまっていくのです。
一連の出し物を舞台から見せてもらっているような、
実際に自分が味わうことのできる作品を頂いているような気分になります。
そしてそれがまた実際にとても美しく、美味しい。
良い食材と確かな技術で、これまでにない組み合わせで
ネタに仕事をされて提供される寿司、肴の数々は新鮮な驚きを感じます。
お店は明るく、カウンターのみですが店員さんもキビキビと連携して
動いておられ、
よいお寿司屋さんに初めて挑戦する方にも優しく、
そして様々なお寿司屋さんを経験されたうるさ方でも十分満足できる、
そんなお店だと感じました。
ちなみに寿司についてですが、
多くの光り物は浅く締めてから寝かしているそうで、これが熟成を生んで
その魚の旨味を引き出しているのだと感じられます。
春子やイサキも本来皮の硬い魚ですが、これも皮目を美味しく頂けるように
仕事がされており、これらは特に印象に残りました。
また季節を変えて伺ってみたいと思いました。

☆稚鮎焼き ほろ苦がちょうどよい
★キタムラサキウニ
☆茶碗蒸し、生海苔と桜えび
★中トロ漬け 中トロの漬けなんて初体験です
★追加 閖上の赤貝
★穴子 煮てから最後に炙り 香ばしい
