お盆過ぎの日曜日、単身伺いました。
当然、2か月前から予約をしてあります。
2クールのうちの1クール目の18時、8名揃ってのスタートです。
⚪牡蠣と蟹の茶碗蒸し
牡蛎の身がこれでもかってほど入っていて、濃厚。
⚪つぶ貝と赤身のオクラのソース添え
つぶ貝のコリコリにこの綿で味付けされたオクラのねばねばが絶妙のコントラスト
⚪いばらがにの内子
卵の黄身を凝縮したような旨味が強烈。日本酒に合う。
⚪ノドグロの味噌漬け
脂の乗りが物凄い。でも上質な脂でしつこくない。
⚪じゅんさい馬糞
⚪蒸しアワビ
蒸しアワビは柔らかく、その下に肝のリゾットが隠れている。やや酢飯の酸味が勝ってしまっている印象。

このあん肝は味付けの技術が光る。クリーミーかつ複雑な旨味が、やっぱり日本酒に合う。
⚪ホッキガイ
包丁の入れ方に技術が光る。ホッキガイの旨味が何重にも押し寄せてくる。
⚪礼文のムラサキウニ
⚪キンキ
焼き肉のような旨味。この味はどうやったら出せるのか想像がつかない。

⚪お味噌汁
シャリは赤シャリで、ゴマや柚子胡椒など隠し味として適材適所に使用しており、ネタによってはヅケにしています。
台風のしけで、思うように食材が揃わない状況のなかで、これだけの料理を提供できるのは、技術の引き出しがそれだけ豊富ということでしょう。
我々の後ろに控えて、常に気を配って動いてくださるスタッフの方も、心地よかったです。
生ビール以外に日本酒もお代わりして2万円台に余裕でおさまりました。
