8月、三連休の帰省に引っ掛けて訪れたのは、久々の〈明寂〉。
店主・中村さんのキャラクター、料理に対する姿勢に惹かれ、またダシを極力使わないという和食のカテゴリでは特異なスタイルも相俟って、年に1回はゴツイお値段に目を瞑ろうと訪れている。

この日は鮎の3種類の食べ分けをハイライトに、鱧あり、冬瓜あり、とうもろこしありの夏の和食。中でもこちらでは定番の「絹巻すし」で巻き込まれるのが揚げられた鮎で、この日、文句なしのハイライト。濃厚な茄子のうまみと素麺が美味しい⑩、からすみを一工夫してとうもろこしと合わせ、見た目以上にとうもろこしが主役としての存在感を発揮する⑪、最後にダシを使ってほっとさせる一品の牛肉⑫と、隙がない。漬け物であっさりいただいた後に煮凝りだの鯛のでんぶだのですでにお腹いっぱいなのにさらに食べてしまうごはんだったり、やっぱりここからは離れられないなと実感。
偶さか前回、訪れてから京都のしっかりとした和食をいただき、経験値が上がったからそう感じたところはあるだろうけれど、連綿と続いてきた和食の文化に対するカウンター・パートとしての位置をしっかりと保ちながら、より海水の使い方も板について来たというか、前回は試行錯誤のうちという気がしていたところ、使い処と使い方に迷いがなくなり、馴染んだ感じがした。
前回、お隣のお客さんが頼んでいたペアリングも、日本酒とワインを織り交ぜながら進んでいき、最後にブルゴーニュのグランクリュで落とすおしゃれな感じ。聞いてみると中村さんもテイスティングには加わっているようで、⑤目鯛の藁焼きとフランスのシュナン・ブランを合わせたところは、今日の料理の中でもトップクラスの相性ですよ、と囁いてくれた。
サービスもレベルが上がったように思う。さりげなく色んなものが調っている状況や、お酒の説明など、以前よりもクリアにわかりやすく感じた。
最も、ペアリングを入れてしまったことでお値段が75,000円を超え、一段とゴツくなってしまったのだが。ただ、和食でワインを入れて、しかも立地は六本木、みたいなことだと、こうなるよなとは思う。
次は、春を狙いたいところ。ただ、おすすめいただいた4月がちょっと、いつものことながら予定が立てにくい時季なんだよねぇ……でも、こちらの山菜とタケノコは是非ともいただきたいぞ、とか思うと、がんばって調整しようという気にもなる。
