鰻屋さんを訪問するのはとても稀で年1回くらい、都内にはいくつもの老舗や評判を博す名店がありますが、ここ数年はずっとこちらのお店です。江戸川橋とややマイナーな地区、この辺りは出版社が多いのでレストランは多くはありません。こちらも住宅街の一角にありますが、終戦後まもなくこの地へ移転されたようです。
お店に到着し個室へと案内されますが、さっそくビールを。蒸し暑い中あるいてきましたので、ことのほか、ビールがうまいですね。
この日のメニューですが、変わりばえするものではなく、同じようなながれ。
◇ お通し(おぼろ豆腐・突出し)
◇ 三点もり(枝豆、鯛昆布〆、かまぼこ)
◇ 自家製珍味(卵焼き、蟹煮凝り、たらこのカラスミ)
◇ 鰻茶碗蒸し
◇ うざく
◇ 骨煎餅
◇ うな重(香物・肝吸い付き)
◇ 水菓子
冷酒は〆張鶴・十四代。
こちらのお店は、素焼きの後に蒸しを約1時間と、長めに行うところが特徴です。その後、タレを塗り蒲焼きとなりますが、長年継ぎ足しされたタレは下地のキレとコクが特徴で、鰻本来の味を如実に感じます。鰻の食感ですが、ごく丁寧な工程を経て供せられますので、優しくふんわりとした身と備長炭で力強く焼き上げられた皮の絶妙な塩梅はこちらのお店ならでは。この日の鰻も、脂ののり・香り・鰻特有の滋味深さとも申し分なく、たいへん満足のいくものでした。
暑い夏もなんとか乗り切れそうです。
