4月につづき2回目の訪問、今回もご常連様の貸し切りのお席にご相伴を預からせていただきます。開店から半年強となりますので、ご主人もすっかりあたらしいステージの雰囲気になられたような印象です。

どれも丁寧な仕事がなされてたつまみの品々ですが、とくに印象に残ったのは、藁で炙られ香りのよい鰆、身のしまった甘味・香りが秀逸な白甘鯛、当日11時に水揚げされた弾力・うまみの比類ない鯵、味噌漬けされたからすみでしょうか。
お酒は寿萬亀としましたが、両者がお互いをひきたてるほどの相性でした。

握りはすっきりとしたシャリがタネの魅力を十二分に引き出してくれどの握りも唸らされるのですが、きめ細かいきれいな脂が印象的な中トロが圧巻でした。ご主人はひとつひとつ丁寧にご説明くださるので、反芻しながら咀嚼しますと素材のうまみが迫ってきます。
ほとんどのタネは千葉県産ですが、こちらの青魚はどれも極上ですね。鰆、鯖、鯵、小肌と感銘をうけました、東京湾、外房と豊穣な千葉の海にほれ込むご主人の目利きに感謝です。また、鯖棒寿司、海胆、巻物でお出しいただいた海苔は極上でたいへんかおりがよいものでした。
この日は隣席の方が同窓とわかり、しばし学生時代の談義に花が咲きました。当時にトリップするなどたいへん心地よいひと時を過ごすことができ、主催者様にあらためて感謝申し上げます。
