グラスで味わう出汁の奥深さ。昆布水は昆布を水につけただけで、昆布の味がしっかりと。旨みの違いをストレートに楽しめます。

福島県の天然の炭酸水を使用。粒が大きく、粒の立ち方や香りが際立ち、お米本来の甘みをしっかり感じられました。
・八寸 吹き寄せ
鹿児島紅はるかサツマイモ天ぷら、岩手県里芋、秋田県銀杏、熊本県栗羊羹渋皮入り、北海道つぶ貝くるみ和え、朴葉焼きえぼ鯛。中秋の名月をイメージ。季節感たっぷりの盛り合わせ。素材の持ち味を丁寧に引き出した一皿で見た目も楽しめました。
・茶碗蒸し(長野県マッシュルーム)
天然のマッシュルーム。旨み以外に甘みもあります。香り高いマッシュルームが主役で、口の中に香りがものすごく広がります。
・松茸と秋刀魚の飯蒸し
ご飯の上に松茸餡、秋刀魚が出て来ました。
秋刀魚の身はふんわりとしており、松茸の香りと秋刀魚の旨みが口の中で爆発。季節感あふれ松茸餡の濃厚かつ風味豊かなのが美味しかった。
・愛知県雪鰆 焼き 砂糖塩
一番脂が乗っている時期の雪鰆。17%脂質を含んだ鰆だそう。肉厚で旨みがギュッと詰まっています。脂のりも良く、食感はふわっととろっとで堪りません。
・雪鰆刺身
背の部位の造り。皮目を炙った状態で、香ばしい香りが広がります。しっとりとした脂でねっとりとした食感。魚の甘みが際立ちます。
・鱧のすき焼き
兵庫県の郷土料理。割下がほうじ茶と椎茸。
鱧の柔らかさと割下のコクが絶妙。玉ねぎもとろとろで、贅沢感のある一品。
・鰻の北京ダック
香ばしい鰻は皮目がパリッと食感が楽しい。牡蠣と山椒を合わせたジャムと薬味が合わさり、見た目も味も楽しめます。
・伊豆の伊勢海老 東寺揚げ
旬の伊勢海老を卵白と湯葉のみで包み揚げ。外はカリッと身はぷりっとした海老は香ばしさと甘みが際立ち贅沢で美味しかった。
・ビーツの炊き込みご飯。(岡山県あさひ)伊勢海老の味噌汁。漬物。
ビーツで出汁をとったご飯。北海道の秋鮭、いくらが合わさった1品。色鮮やかで華やか。程良い塩味と、ビーツといくらの食感が堪らない。お米も絶妙に合わさり、本当に美味しいご飯でした。味噌汁は伊勢海老の旨みがたっぷり。

愛媛県の早生のみかん。みずみずしく酸味があり、それが甘めの白餡と合わさってバランスが良い。
