人生初宮﨑到着後一発目の食事は、もし宮﨑に行くならずっと行ってみたかった創業50年の老舗鮨で宮崎県鮨部門1位の【一心鮨光洋】でたまたまランチの予約が取れたので伺いました。
本当はフルコース食べたかったけど、次の飲食店の時間の関係で『握り12貫』のコースで。
シャリは砂糖を一切使用していなくて少し強めの鮨酢と塩のみで、シャリの温度に合わせてネタをチョイスし握られており、口の中に入れた時の程良くシャリがほぐれる感じが最高。
茹でたてでプリプリ食感、海老味噌の風味が口に広がる『車海老』、パリパリの海苔を使用した濃厚な『雲丹の手巻き』、薄く切ったものを何枚も重ね過去一のねっとり感で噛むほど旨味が口に広がる『アオリイカ』など一つ一つの食材や調理方法の拘りが本当に美味しくて感動しました。
ちょっと強面な大将ですが、最初に無理を言って○時までにお店出たい旨を伝えると笑顔で応えて頂き、お客様への心遣いなど本当に素晴らしい人柄。
宮﨑に来る度にまた必ず行きたいって思う鮨屋で、次回は夜ゆっくりお酒を飲みながら食べてみたいです。
