先日の【日本料理FUJI】に続き、今静岡県焼津市で予約困難店になりつつあるTheTabelogAward2024Goldを受賞された【温石】へ。
焼津駅からタクシーで5分ぐらいの静かな住宅街にあり、歴史ある建物を改装し風情漂う和空間で、手入れされた中庭を通って店内へ。
おまかせコースは焼津市を中心とした静岡県の地場の旬の食材を使い、当日は14品とお昼から大満足な品数。
スタートの鯵の砧巻きや鯛とアオリイカのお刺身などの鮮魚は、情熱大陸でも特集された焼津の老舗『サスエ前田魚店』から仕入れており、魚本来の旨味を感じる事ができ、めちゃくちゃ美味しい。
大人気メイン料理の金目鯛と実山椒醤油は、パリッパリな皮面と脂がのったフワッフワな身は過去一の美味さで抜群な火入れが本当に素晴らしい。
また白甘鯛と管牛蒡のお椀やエボ鯛の蒸し物など一通りのコースを食べてみて、店主の杉山氏の食材を最大限に活かした調理方法や出汁、調味料への拘りなどもとても感じれて楽しいグルメ会でした。
刺身で出てきた高級食材『伊勢海老』は、恐らく10年ものぐらいの大きさで、裏で〆られたばかりだったので前脚を動かせている所を見ると、鮮度や個体の物の良さが感じれます
本日の〆のご飯は、今が旬の新筍の土鍋ご飯と玉丼
まずは筍ご飯をそのままで頂き、2杯目はフワッフワ卵の玉丼、3杯目は筍ご飯の上に玉丼を掛けてもらって贅沢で土鍋で炊かれたご飯は、お米の甘味と筍の風味が最高で、おこげもいっぱい入れて頂き感無量。
『サスエ前田魚店』の魚を使った贅沢な日本料理最高に美味しくて次回温石予約取れたら、帰りに『サスエ前田魚店』近いみたいなので寄ってみたい。
