静岡県で今勢いがあり、予約困難店の【日本料理FUJI】の予約枠頂いたので静岡市へ。
山海の幸に恵まれた静岡の旬の厳選食材を堪能することができ、その中でも鮮魚は情熱大陸でも特集された日本最高品質を揃えるサスエ前田魚店の前田尚毅氏が厳選されたものを使用と聞き、今年一の楽しみグルメ会。
新筍と鯵の白子からスタートし、鯵の白子は初めて食べたけど鯵本来の風味抜群で、めちゃくちゃ美味い。
アオリイカや白ミル貝、鰤の刺身も最高の熟成具合で本当に感動レベル。
蛤の飯蒸しやエボダイのお椀、〆の筍ラーメンなどの出汁は地元焼津の一本釣りカツオの本枯節の鰹節を中心にあっさりなのにとても深みがあり、もっともっと頂きたかった。
土鍋で炊かれたご飯は、ご飯、ジンドウイカご飯、鯵の漬けご飯と3種類も楽しめて、特にジンドウイカご飯が個人的に1番美味しかった。
初めての#FUJI は藤岡氏の調理姿や厳選食材、料理、お酒全てにおいて最高に楽しめたので、また必ずいきたい。
