桑名市益生にあった【平和寿司】から春日神社の鳥居前の桑名市江戸町に移転した、伊勢市の【こま田】と並び三重県を代表するミシュラン一つ星獲得の【江戸町すぎもと】にランチで伺いました。
店内は檜の一枚板のL字カウンターで9席あり、とても綺麗です。
本日のネタが入ったネタケースを最初に並べていただきましたが、どれもとても綺麗で見るだけで期待値があがります。
スタートは桑名名産の『蛤の酒蒸し』(調味料や塩は不使用)で1つはそのまま、2つ目は酢橘を絞っていただきましたが、ぷっくりとした天然蛤はレアな火入れが抜群で、出汁も絶品。
上質なネタと硬めのシャリは一体感があり、口の中で噛むたびにほぐれる感じのバランスがとてもいいです。
やま幸の本鮪は、大トロ、中トロ、赤身と3貫もあり濃厚な味わいで幸せ。
個人的に小肌、黒ムツの炙り、鯵が好きでした。
また三重県といえば松坂牛ということで三角バラをつかった『松坂牛三角バラの太巻き』は柔らかく肉の脂とシャリおぼろ昆布の相性が抜群でした。
最後に『馬糞雲丹』を追加しましたが、久しぶりに美味しい生雲丹をいただきました。
誕生日祝いで友人がご馳走してくれたので金額分からないですが、個人的に定期的に通いたいお店です。
