フランスやドイツなどで修行を積んだ、音羽和紀シェフがオーナーを務めるこちらのお店に縁あって訪問です。
地元野菜にこだわった料理の数々は、来る者を感動させ、その伝統も名声は宇都宮に留まらず、全国的にも響き渡っています。

『エルダーフラワーゼリー寄せ』
菊のマリネとリンゴ酢

赤ワイン・カシスで色付け、ハチミツ 、ナッツ、オニオン
『バルバジュアン』
ヤギのお肉を山椒で煮込んだもの
『伊達鳥ムネ肉』
焦がしネギ粉末 米粉のベシャメルソース ハーブはガランガルとレモングラス
●ゆり根のフラン(洋風茶碗蒸し)
中に白子、風味付けにトリュフが使われている。
●日光大滝ヤシオマスのショーフロア栃木県産旬野菜のサラダ
日光で養殖されているヤシオマスをショーフロア(ソースを数回に分けて掛けながら低音で火を入れてゼラチンで固めていく)に。
ミョウガとコルニッションのラビゴットソース
●帆立貝のポワレ 畑市場のカリフラワー トリュフビネグレット
帆立をバターと卵黄でポワレに。付け合わせは、カリフラワーのグリル、スライスに砕いたヘーゼルナッツ
もう一つの付け合わせはカリフラワーのピュレと卵黄味噌漬
トリュフドレッシングのソース
●甘鯛のクルスティアン もち絹 香とスープドポワソン
コシヒカリ、もちきぬか(大麦)
豚肉のエキスを使用したスープドポワソン
●栃の木黒牛のロティ あっぷる村田さんのトレヴィスのブレゼ
トレヴィスを白ワインでブレゼ(蒸し煮)する事で、素材の苦味が立ち大人の味に。
ゴボウのソテー、しいたけ
カードは、魚介系の出汁で竹炭の羽を作ってあります。
●蜜柑のソルベ
蜜柑を絞り、一日置いて上澄みだけを煮詰めて再度冷やす
●タルトタタン ピスタチオのグラス
レモンカードにチーズ、キャラメル、ラム酒を加えたオレンジと、ソースの三重奏。
●ミニャルディーズ
『カモミールのマカロン』
『アーモンド フランボワーズ』
『青リンゴと柚子のゼリー』
『蜂蜜のガナッシュ』
後一つ分からず…そばを使用した…
フルコースで頂きました。
どの皿も全て芸術品の様に繊細で、フレンチならではの技法を、目で視て・味わう事ができました。
宇都宮に対しての愛情が深い音羽シェフだからこそ、宇都宮の魅力を最大限に引き出す方法がわかっているように感じました。
