快気祝いで主人に連れてきて貰いました。
元電通本社の斜め前の電通通りに面した新しいビルの9階にあります。
店内までのエントランスは微かにお香の香りが漂い、
店内は広々と和モダンな素敵な雰囲気です。
カウンターに案内されましたが、
椅子が、一日中座っていても疲れなさそうな贅沢な椅子です。
メニューは《 25000円のコース 》
で頂きました。
*甘酒 獺祭の甘酒
すだちが搾ってあるので
爽やかな口当たりです。
*生イクラ 北海道余市
口に入れるとイクラの
皮がスッと消えます。
イクラだけで頂くので
この薄味が丁度良いです。
*揚げ銀杏、落花生
塩茹でされた落花生は
《おおまさり》と云う
ブランドだそうで一粒が
とても大きいです。
*アン肝 北海道 余市
*お造り
平目、白甘鯛、えんがわ
白甘鯛は別名シラカワとも
云われるそうで、
昆布〆にされているので、
白甘鯛は何もつけないで、
平目はポン酢で、えんがわは
わさび醤油で頂きました。
*牡蛎のコンフィ
低温調理でオイル煮と説明
されましたが、
絶妙な美味しさでした。
*カマス炙り
これ程の肉厚のカマスは
初めてです。
*白子 トリュフ塩 で
*毛蟹
蟹がウニと合えてあり、
まろやかです。
*ノドグロ塩焼き
口いっぱいに広がる上品な
油にとろけます。
*シャコ しじみスープ
*根三つ葉のお浸し
*べったら漬け
皮付きなので甘過ぎません
*鈴かぼちゃ
季節限定で生で食べられる
若取りした栗カボチャだそう
で、シャキシャキと食感が
心地良いです。

からすみが丁度良いです

・中とろ
・大とろ
すじはがし、という包丁の
入れ方で噛まなくても
とろけます。
・車エビのコンソメ漬け
・甘えびの昆布締め
昆布の香りがふあっと
広がり次に甘さがきます
・小肌
〆具合といい今まで頂いた
なかで一番の好みです。
・カツオ
とても香りのよいカツオです
・穴子
塩とつめで。
美味しいとしか言葉が
ありません。
・ウニ
大好きと言いましたら、
手巻きにして、ウニを
沢山のせてくれました。
・かんぴょう巻き
*玉子焼
一見 高野豆腐みたいですが
つるんと滑らかで、お砂糖は
特別な黒糖を使っている
そうで黒砂糖のクセはなく
上品で優しい甘さでした。
*沖 蜆の味噌汁
北海道の蜆だそうで、
ビックリするほど大きい蜆
*シャインマスカットのゼリー
《 飲み物 》は
*玉露ほうじ茶
香焙 ( カホ ) という
玉露ほうじ茶で、
まろやかな香りです。
*越乃景虎
アルコールが弱い私でも
優しい口当たりで
飲みやすいです。
素晴らしい江戸切り子の
ぐい呑みで美味しさが
増します。
*赤とんぼ ひやおろし
景虎とは反対にキリキリと
したお酒だと思いました。
ぐい呑みは、江戸切り子のコレクションから好きな物を選べるのもオシャレだと思いました。
全てのネタに丁寧で繊細でこだわりの仕事がされていると説明して頂き、美味しさに納得です。
