銀座、六本木など3店舗展開し、7年連続ミシュランの星を獲得されているという吉澤定久氏が最初に開いたお店「ぎんざ 一二岐」に行ってきました。
銀座といっても、東銀座/新富町の落ち着いたエリアにあり、席数も少なく落ち着いた雰囲気で好感が持てます。
最近、和食の有名店は3万、5万は当たり前という風潮になっていますが、こちらは夜のコース(税・サ別)で15,000円、18,000円。
東京・銀座にあってこれほどの美味しさと良心的価格を併せ持つ和食店はなかなかありません。
(15,000円、18,000円の大きな違いは、最後の食事が土鍋焚きの白いご飯か炊き込みご飯の違いですが、これは絶対に炊き込みご飯の方がお勧めです!)
有名和食店ではお酒のメニューが無くお店の方が選んで出してくる店も多いですが、こちらは親切なメニューがあり明朗会計。徳利1,500円程度と安心して楽しむことができます。
料理のクオリティは流石ですね。
最初の揚げ胡麻豆腐。よく見る一皿ですが、香ばしい衣にくるまれた白子のようにとろける胡麻豆腐!
一見さりげないふりをしながら想像をはるかに超えてきます。
看板料理の「かつをのわら焼き」も、カウンターの正面で派手な炎をあげているのですが、「これから焼きますよ!」みたいなパフォーマンスは少しもなく、さりげなく調理して出してきます。
焼いた皮目のパリッと香ばしい食感と藁の香りが素晴らしく、よくあるミョウガとポン酢ではなくニンニク(スライス)+ワサビ+塩で頂くのですが、これが鰹の美味しさを邪魔せず引き立ててくれて、さすが看板料理と感動しました
また、中盤にこれがあるおかげで、コースが平板にならず場面転換が図れており効果的。
それ以外の料理もどれも素晴らしく、悶絶する美味しさ、器も装いも素敵なのに、「銀座でミュシュラン」みたいなギラギラした雰囲気、アピールを少しも感じさせず、さりげなさの仮面をかぶってお客さんをリラックスさせてくれます。
おかげで居心地が良くて最後の甘味まで堪能させて頂きました。
素晴らしいお店です。是非また来たいと思います。
