築地の日本料理店「櫻木」
開業まだ3年足らずなのに、ミシュランガイド東京2024のセレクテッド、食べログ日本料理 TOKYO 百名店など、早くも名店の仲間入りしているお店です。
店内はまだピカピカで、モダンかつ凛とした檜のカウンターが8席。
18時一斉スタート、お客さんが揃うと大将の櫻木氏がオープンカウンターで腕をふるいます。
大将みずから鰹節をけずる所作の美しいこと、そして削りたてのピンク色の削り節が鍋に投入され、美味しい出汁になっていく様子や、備長炭で鰻や鰹を炙るところなど、とても興味深く拝見します。
猛暑の中、涼あふれる鮑の蒸し物でお客さんの気持ちを一気につかむと、今度は鰻の塩焼きで胃袋をつかみます。
椀物の上品な出汁を堪能すると、
初鰹の炙りは目の前で藁焼きにして軽く燻製にしながら、装いはフレンチのような美しさ。
洋の要素や映える「卵かけご飯」を巧に取り入れたりしながら、創作和食っぽい軽薄さを少しも感じさせず和食王道ど真ん中というのはさすがです。
どの料理も感激するほど美味しいのですが、特筆すべきは大将のホスピタリティ!
和食の名店の大将あるあるは、
「料理は美味しいのにずっと無口で空気が重い」
または
「大将が王様になっていて、うんちくを語りまくる」
なのですが、櫻木氏のお客さんとの距離感は絶妙で大変心地よいのです。
佇まいも所作もとても洗練されていて心地よい。
こんな方は珍しいなと思って調べたら、新宿パークハイアット東京の日本料理店『梢』で18年研鑽を積み、副料理長まで務めていたとのこと。サービス業のベテランだったんですね。納得!
評判以上によいお店でした。是非再訪したいと思います。
