札幌駅エリアから石狩街道を渡って東側にひっそりと佇む真紅の暖簾、まだ空が明るい為にライトアップされておらず、気が付かずに通り越してしまいましたw
引き戸を開けると明るく清潔な店内に一番乗り、落ち着くL字カウンター端の席に案内されます。
まずはサッポロClassicで乾杯♪真っ白な薄張りのグラスの口当たりが素晴らしい!
まず先陣は明石の真蛸とスナップエンドウの小鉢、真蛸柔らか、タウリン摂取で肝臓の喜ぶ声が聞こえます、ふふふ。
函館(七飯町?)さわやかファーム産・白菜のすりおろし鮑乗せ。柚子皮の鮮やかな風味が美味さを引き立てる。
余市産あん肝、柔らか濃厚、アイスプラントの仄かな塩味が良い口直しに。
積丹のヒラメ握りは寝かせて一週間、シャリはゆきさやか、酒粕を熟成させた赤酢に負けていません。

長崎は佐世保のイサキと来て、室蘭のトキシラズ、良い意味で濃厚な生の鮭とば?味が凝縮されていて口福至極!
兵庫県淡路島の太もずく、生姜の千切りが相性良き
からの〜濃厚なごまふぐの白子・蕪のみぞれを日本酒・京極で流し込む、う〜ん最高か!
徳島県の縞鯵、ネタとシャリの間に赤紫蘇、江戸前の仕事が光る。
駿河湾・桜海老手巻き、包丁入れるとパリッと音が響く見事な海苔、桜海老に負けていないダブル主演級、お見事です。
苫小牧の北寄貝、北寄貝と言えば苫小牧、肉厚な身に飾り包丁で見た目通りの美味しさ、食感に歯が喜んでいます。
牡丹海老と蟹出汁がそのまま溶け出したかのような濃厚お味噌汁で舌を戻してからのトロ、見た目も味も文句無し!酔鯨がハマる、ハマるぞ!
握りの〆は真打☆稚内は新物のキタムラサキ雲丹、はい、見事に締りましたw
〆のお茶を頂きながら、見た目から美しい熊本県デコポンのデザートをまったりと堪能。
いや〜大変美味しかったです♪大満足、ご馳走様でした〜!控えめに言っても最高でした☆☆☆
