ピザの人気店には数々行ってきたけど、トップクラスのお店だなと思った。
少なくとも2025年No.1ピザ屋さん。
この店が注目されているのは、単に美味しいだけじゃなく、和を取り入れたピザが特徴的である点。
シェフである本倉裕樹さんが懐石料理出身という異色の経歴を持ち、
その技術が、ナポリピッツァに和の繊細なエッセンスを持ち込み、独創的なピザを生み出している。
今回は、この店の個性が特に光る二つのピザを注文した。
1. 日本のうまみ
まず感心したのが「日本のうまみ」というピザ。
乾燥椎茸のビューレのクリーム、モッツァレラ、ペコリーノ、サバの干物、鰹節、昆布、ネギ、ゴマ、醤油を使用したピザで、繊細な「うま味」の層が感じられる。
この奥深さこそ、懐石で培った技術が活きている部分で、和食の繊細な仕事がピザという形で表現されていて、まさに傑作。
2. テリヤキボーイズ
昆布出汁、鰹出汁、九州醤油で作る照り焼きソース、木の芽入りの地鶏のサルシッチャ、自家製マヨとコーンのソース、モッツァレラ、黒七味を使用したピザ。
薄くクリスピーに焼き上げられた生地が、甘辛いテリヤキソースの風味とマッチしていて、とても美味しかった。
ただのテリヤキではなく、出汁や黒七味を使用してるからこそ出るであろう和の美味しさがピザに表現されていて最高!
ワインの種類も豊富で、ピザに合わせてイタリア・アブルッツォの赤ワインをセレクトしたが正解。
