”日本料理 楽只(ラクシ) ”
ご夫婦で営なわれているお店は今年で12年目。
身体に優しい発酵日本料理を提供していただけるお店です。
店主の旦那さんは、
発酵講座も開催されていて、
発酵に対する心意気を感じます。
入り口を入るとすぐに一枚杉で出来たカウンター席、奥には個室が1室ある、隠れ家的お店でした。
タバコは喫煙不可です。
今回は楽只コース/13.580円(税込み)を
いただきました。
~コース内容~
・自家製生麹プラム甘酒
・先付(冬瓜・才巻海老・鮑ジュレ)
・膳菜(全て発酵を加えています)
ムール貝/野菜タルタル/水たこ/しろだつゴマびたし/にしん山椒漬け/静岡天然稚鮎
/トウモロコシのカステラ/イワシのガリ巻き
・お椀(ハモ/ハモの子玉子とじ)
・お造里(発酵焼き(備長炭)ハモ/長崎本鮪/しまあじ/宮崎真鯛
・焼物(備長炭焼き)対馬穴子/発酵アンチョビソース/カブ/自家製メンマ
・逸品(奈良のやまと茄子を使った冷やし茄子)
・お食事(土鍋の揚げ鯛めし炊き込みご飯)
・デザート(くずきり(デーツシロップ)/わかもも)
料理に使われている食材を聞いて、
店主さんの食材に対しての強いこだわりを感じました。
こちらのお料理は化学調味料不使用。
素材本来の味が最大限に引き出されていて、
正に雑味が無いと言う言葉が1番適しているのではないでしょうか。
見ても楽しめるお料理の数々に胸が躍りっぱなしの私。
お料理に合う日本酒も多数取り揃えていて、
私は広島県の純米酒 夏限定の ”夏純”が
辛口さっぱりで口当たりが良く、とても美味しかったです。
