全ての食材が極上で、それぞれの素材の魅力を高温の一瞬の揚げで極限まで引き出す。
もはや“揚げ物”という枠を超え、食材を芸術として昇華させた料理。
海うなぎや鴨、子持ち昆布、鱧といった旬の和の食材に加え、フォアグラやトリュフリゾットなどの洋の要素も絶妙に織り交ぜ、まさに「季節と世界を一口で味わう」構成。
一串ごとに物語があり、揚げ方・温度・ソース・塩のすべてに哲学がある。
そしてやはり、名物カツサンドの完成度は異次元。
衣の香ばしさ、パンの甘味、肉の旨味が一体となって、思わず無言になるほどの美味しさだった。
北新地らしいラグジュアリーな空間と、職人の所作も含めて、まさに五感で味わう“串カツ体験”の極み。
「串かつ凡」を食べた後では、もう他の串カツが別の料理に思えてしまうほどの完成度だった。
