極薄に切って出されるこちらの生ハムをいただくと、他で食べられなくなってしまうほどの美味しさ。
口の中で溶けて鼻から旨みが抜けていきます。
特に岐阜の多田さんのペルシュウは、東京のお店で食べれるのはこちらとあちらの2店だけみたいですね笑

1日6人のために高橋シェフが造り出すスペシャルでプレミアムな空間。
その日の分だけ仕込み、目の前で調理し、一品一品が最高の状態で提供されます。
新規の予約は取ってらっしゃらない模様。
高橋シェフの以前のお店から通っているような常連さんくらいしか無理なんでしょね。
