よく行くお店の大将から此方を紹介されてたんですが、行きたいと思いつつも2年近く経ってようやく訪問して来ました。
京都・祇園四条の鴨川沿いにある本店は、某ガイド誌の京都版の星持ちだったり、食べログアワードのBrownにも輝く名店ですが、その安久(あんきゅう)が2021年9月に銀座にオープンさせたお店です。バーニーズ・ニューヨークが入ってる交詢ビル4階のレストランフロア内となります。
前にNHKだったかな?京都のやま岸さんと錦市場の魚屋さんの話をやってて、その中に京都の安久の大将も出てましたね。
銀座店の料理長の河村鉄平氏(名前がカッコいい!w)は千葉の市川市生まれで、高校卒業後、京都へ料理の修行に行かれ、安久で7年間勤めたのち、東京に戻って来られたという経歴のお方。単身赴任だそうですw
仕入先は、オープン当初は京都から取り寄せたりしてたそうですが、輸送の時間が掛かるし、毎日品質を揃えた食材を確保するのも大変なので、信用できる業者さんも見つかったので、いまではこちらでほとんど仕入れてるそうです。
他に河村をサポートしてる料理人も松戸市出身の方だそうで、千葉コンビですねw 接客や仕上げもやられてる方は台湾の方だそうで…って、前に鮨 はしもとでカウンター内にいた人じゃん!
というサプライズもありつつ、おまかせコース、スタートです。(お弟子さんに若手がもうお一人いらっしゃいます)
・茄子と金目鯛の前菜
金目鯛は皮目を炙って香ばしく。林檎のジュレでさっぱりと。
・叺の飯蒸し
叺は少し炙って。脂が乗ってる叺で美味しい。塩気もちょうどいいね。
・蓮根餅とぐじのお椀
薄味でいいお出汁どす。蓮根餅も甘鯛も美味し~。
・伊勢海老
山葵醤油、卵黄、海苔と和えて、長芋に潜らせて戴きます。プリプリ、濃厚で旨ッ!!
・黒鯥
山椒を効かせた幽庵焼きで。上に花山椒の佃煮、下にレタスの千切り。
脂が乗った黒鯥にさっぱりしたレタスの千切りの取り合わせがイイね。花山椒を佃煮にしたのは初めてだ。
・素麺
玉葱の摺り流しで。山葵と蓴菜、花穂紫蘇と一緒に戴きます。
最初に玉葱を擦った時の癖を感じ、でも後味に甘味を感じて美味い!!
・冬瓜
鶏と煮出して。濁ったスープは鶏出汁。
・稚鮎の甘酢餡掛け
九条葱と。揚げた稚鮎のサクッと軽い食感に腸の苦みが(゚д゚)ウマー!!

鰻は蒸して脂を落として。お好みで大根おろしで戴きます。別盛りだったのを何も考えず白米に乗せたら、
あ、のっけちゃった!?と。鰻に米ってことで無意識に乗せてしまったw タレをかけますか?と言われたけど、
そのまま大根卸しだけ乗せて戴きました。でも、残りは遅ればせながら、鰻に大根おろしを乗せて別々にw
・シャケご飯
季節を問わず、ずっとやってる此方の定番飯だそう。もちろん鮭は注文を受けてから炭火焼に。
胡麻を振り、柚子を擦って、こりゃ美味しい!
・カレー らっきょうを添えて
こちらはお客さんのリクエストで3日前に珍しく作ったもの。スパイスの効いたカレーで香りもいいし、旨い!
・レモンシャーベット 下にミントのジュレ、上からマンゴーソース
さっぱり美味しい〜!
アットホームがテーマのお店だそうで、河村さん始め皆さんとの楽しい会話を弾ませながらお食事が出来て楽しかった。
