麻布十番の酉囃子さんに二度目の訪問です。今回は平日二回転目(20時~)の回です。
神楽坂時代から人気店だったので当たり前かもしれないですが、オープンしてまだ4ヶ月というのに早、高評価ですね。
炭火焼きに加えて薪焼きも駆使する二刀流の焼鳥屋さんですが、今宵はどのような焼鳥を戴けるでしょうか。
・本日使う地鶏のささみの湯引き
梅だれでさっぱりと。
なお、本日の地鶏はホロホロ鳥、比内地鶏、名古屋コーチンだそうです。
・泉州の水茄子
炭で焦がしたそぼろ葱味噌が芳ばしくて美味しい。
・胸肉のたたき食べ比べ(手前が比内地鶏、奥がホロホロ鳥)
中心部は半生で、皮は薪焼きして芳ばしく、どちらも旨い。
・ハラミ焼き
これは肉々しくて美味いなあ。上のは行者菜というもので、行者にんにくと韮のいいとこ取りの野菜だそう。
・名古屋コーチンのだきみ 弾力あって旨い!大葉を刻んだのを振って、香りがまた良いね。
・比内地鶏の手羽先 骨抜きで食べやすく。中に柑橘。こちらも香りがいい。コリッと。味わいはあっさり。
・揚げ立ての薩摩揚げ(上が野菜、下がクミンとチーズ)
確かに薩摩揚げだw 熱々でうまーい!
・野菜焼き ヤングコーンと薪でじっくり焼いたケール
炭火でしっとり蒸し焼きされたヤングコーンと油を塗りながら軽くパリパリに焼かれたケール。
前回は蕪だったけど、ケールと季節ものですね。このケールの食感がいいんだよなあ。
・砂肝 センイを全部剥がして、サクッ、ジュワ〜。山椒も入れて香りよく。
・鴨の胸肉 間に九条葱。分厚いカットなのに柔らかく仕上がって、旨味もたっぷりで旨い!!
・飛騨の東農園のスナップエンドウ 生で食べてもフルーティーで美味しいので、火は軽く炙る程度に。
・藁焼きしたホロホロ鳥のモモ肉
んー。ジューシーで旨ッ!
・手羽の南蛮漬け
焼いた手羽先、手羽中、手羽元を南蛮酢に浸けてさっぱりと。
・焼き稲荷
まさか稲荷寿司を焼いて来るとは…でも美味しいなw
・ぼんじり 脂を焼き切って皮はコリコリ、中はジューシーで美味しい。
・ハツ 中に生黒胡椒。クニッと食感の中、黒胡椒が弾けて旨い!!
・花ズッキーニの肉詰め
今回の肉詰めは花ズッキーニかあ。なんかお洒落w 花の部分は熱いけど一口でとのことで…ハフハフ!
お、中は肉団子に…これはなんだ?チーズ?と思ったらちょうちんだそう、美味い!!
・熊本のゆきやき素麺の煮麺

ほっそい素麺で旨い!ここに行き着くまで、最初はラーメンにしようと思ってたそうで、色々試したけど
ラーメンは難しいとなって、煮麺に行き着いたそうです。

汁ダクで旨い!
・レアチーズケーキ
天然の鯛焼きならぬ天然の鶏焼き風の型を作ってもらったそうです。
前回戴いたものと同じ定番化してるメニューもあったけど、違うメニューも多くて大満足!
間を開けずに来てた常連さんには部位を変えて出されてたり、気い遣いの大将さん。またお伺いしたいですね。
