18時スタートで満席。先ずは貝の出汁汁、貝のエキスがよく効いていた。愛南町の蛸、叩いていないのに柔らかい。宮窪タイ刺身、写真を撮るのを忘れたが、藤本さんが漁獲したもの。赤穂の侍オイスターは生で。新居浜の渡り蟹、下に酢飯があって内子の味が濃い。カワハギ肝和え、朝一番で〆たハギと昨日冷凍した肝であえた。肝は冷凍して脱水したので、甘味が強調している。茶碗蒸しはアコヤガイの出汁とげっこうゆりね、銀杏。貝出汁だけの味付け。甘鯛味噌漬け。これからは、握り。長浜の春子鯛、天草のしんこ、愛南町のアオリイカ4日熟成、今治の1日熟成タイ、八幡浜白アマダイ、愛南町しまあじは、3キロの大物で 1週間寝かせている。八幡浜さわらは、玉葱の醤油漬けで寝かせたもの。大間産150kgマグロ中落ち。煮穴子。三瓶町アジ、車海老、松山あげの稲荷寿司。芝海老と大和芋を合わせ2時間掛けて焼き上げた卵焼き。西条の柿で終了。今回も大満足の料理、ありがとうございます。ごちそうさまでした。
