めちゃくちゃなめらかな茶碗蒸し。
山葵との相性抜群でしたね。
◽︎子持ち昆布
味噌漬けにして、甘じょっぱく味付け。
出汁感も感じることができ、バランスが良かったです。
◽︎三重県の伊勢海老のお刺身
青さ、海苔、昆布醤油で味付け。
めちゃくちゃ甘くて、美味しかったです。
プリップリでしたね。
◽︎イカのわた
葱生姜、柚子胡椒の2種類の薬味。
口の中で溶かしながら食べる。
苦味と甘味のコントラストが何とも言えない美味しさでしたね。
◽︎河豚の白子のお椀
粕汁のように仕立てたお椀。
白子が甘くてクリーミーでふわふわで美味しかったです。
◽︎アサリで炊いたおからの稲荷、干瓢、岩手の椎茸
柚子山葵添え。
そのままでも柚子山葵を付けて食べても本当美味しかったです。
この3種は何か凄く心が温まりましたね。
◽︎金目鯛の薯蕷蒸し
菜の花の苦味がまたいいアクセントで、海老芋、とろろと合わせて食べたら更に美味しかったです。
◽︎トマトをレモン酢に漬けたお口直し
レモン酢も飲んでしまうほど食べやすく、美味しかったです。
◾︎氷で締めた愛知県三河一色産天然の車海老
自家製の塩、広島のレモンで味付け。
甘味が半端なく、めちゃ美味しかったです。
◾︎余熱で蒸した愛知県三河一色産天然の車海老
少し固さがあり、コリコリとした食感がよく、こちらは噛めば噛むほど、旨みが引き立ちましたね。
◾︎ヒラスズキの昆布〆
冬に美味しいヒラスズキ。
柚子山葵がまたいいアクセントで、美味しかったです。
◽︎車海老の頭
香ばしくて、食感も良く、美味しかったです。
◾︎鯖寿司
上:三重県の青のり
下:愛知県の青混ぜのり
鯖の美味しさから、青混ぜ海苔の海苔の余韻が凄く印象に残りましたね。
◽︎からすみの飯蒸し
からすみは粕漬けにして、せりのあんと銀杏。
せりのあんがあっさりしていて、からすみの粕漬けがより引き立って美味しかったです。
◾︎ヤイトガツオ
藁で燻してたたきにしたものを生姜とネギで仕上げたもの。
脂身が半端なく、スッと引く感じがまた良かったです。
◾︎赤貝
ひもと海苔を巻いて。
コリコリとした食感がたまらなく、噛めば噛むほど美味しさが増して、良かったです。
◽︎宇和島の岩もずく
あおさのジュレにしたもの。
青さの磯感、生姜が効いて、バランスが良く、美味しかったです。

優しい味で美味しかったです。
◾︎大間の本鮪 中トロ
スッと旨みが来て、美味しかったです。
溶けましたね。

塩昆布で仕上げたもの。
脂身が半端なく、塩昆布がまたいいアクセントでしたね。

お好みでかき混ぜながら飲む。
優しさから飲めば飲むほど、山葵の旨みが増して美味しかったです。
初めて体験しました。

甘味が半端なく、美味しすぎましたね。
これ、最高過ぎました。
◾︎焼き穴子
脂身が半端なく、美味しかったです。
柚子塩で味付けしたことで、穴子本来の美味しさが味わえましたね。

甘くて本当美味しかったです。
あっという間に握りが終わってしまいましたね…。

海老の脚とみその出汁が効いて美味しかったです。
卵がまた半熟なのがまた嬉しかったです。

白餡には練乳を練り込んだもの。
いちごの甘さを包み込むかのように白餡の甘さが足され、美味しかったです。
