今回はこちら、「鳥匠 いし井」さんへ。
食通の方に連れてきていただきました。
この場をお借りして、再度感謝申し上げます。
言わずと知れた、大阪を代表する料理屋であり、焼鳥屋です。
大将の石井さんは、日本料理店「紀茂登」さん、新福島(大阪市)の焼鳥屋「あやむ屋」さん等で修行されていたとのことです。
焼き鳥 WEST 百名店 2024にも、もちろん選ばれており、全国から食通が集まる場になっております。
焼き鳥好きの一人として、筆者もいつか行ってみたいと思っていましたので、念願の訪問になりました。
今回いただいたコースは以下の通りです。

結論、鶏の旨味が全面に押し出されています!
紀州備長炭を使用され、串を一気に焼き切るスタイルで、鶏の旨味をぎゅっと閉じ込め、その旨味が口の中で爆発します。
串の一本一本の主張もしっかりとあって、それぞれの部位の違い、食感や味わいの違いを楽しむことができました。どれもおいしかったですが、今回もっとも印象に残った串は、「かしわ」でした。
やはり高坂鶏はおいしいです。高坂鶏のから揚げは初めてでしたが、身は勿論のこと、「皮」が非常においしかったです。先付で供された胸肉も柔らかく、夏らしく瓜とナスでさっぱりといただけました。
玉子焼きも面白く、チキンコンソメスープと合わせ、土佐ジロー(高知県の地鶏)の卵を使っているので、非常に濃厚ながら上品な味わいでした。
串をはじめ一品料理も含めて、全体的にポーションは小さめでした。
もう少し串の追加、〆の追加をしても良かったと思いました。次の参考にしようと思います。
総じてサービスも良かったと思いました。
ただ、若干冷房が効きすぎていたような気もしました。
これだけ食べて、支払い総額が20,000円と少しということで、コストパフォーマンスも良いと感じました。
また機会があれば、ぜひとも再訪したいです。
