函館No.1のお寿司屋さんと聞き、来店。
店内はカウンター6席とテーブルが3席。
当日は夫婦1組と男性1人客。
大将はとても気さくな方で肩を張らずに
会話を楽しめる雰囲気。
料理は道内のネタを中心に旬のものが用意
されていた。
一番驚いたのはいくら。
こちらのいくらは醤油漬けではなく、出汁
漬けとのこと。
出汁の甘味といくらの食感がとても相性が
よく、今まで食べたことのない一品。
鰆は、今まで食べたことがないほどに脂が
のっており、美味しい。
鰆は漢字のとおり旬は春かと思っていたが、
大将に聞いたところ、秋に脂がのって美味しい
とのこと。
マグロは中トロ、大トロ、漬けマグロどれも
程よい脂とさっぱりしており美味しい。
特に、漬けマグロは海苔で巻いてあるが、
その海苔は口に入れた瞬間に磯の香りが広がり
美味しい。
小肌はお酢でしっかりと締められており、
美味しかった。
ホッキ貝は苫小牧が有名かと思っていたが、
美な味は八雲産とのこと。
焼き鉄のようなものでホッキ貝の表面を焼いて
おり、口に入れた瞬間、ホッキ貝の匂いが
口中に広がって、肉厚な食感とマッチして
美味しかった。
全体的素材の味を大将の技で最大限に活かして
おり、美味しい。
大将も気さくな方で会話を楽しみつつ、
旬のお寿司と大将の技を楽しめた。
函館No.1と言われるのも納得のお寿司やさん。
