東京都渋谷区広尾5‐3‐13、「Barbizon86」5階にある「鮨在」さん。東京メトロ日比谷線広尾駅から歩くと5分位でしょうか。「寿司TOKYO百名店2022」にも選ばれた人気のお店、ひと月半前に17時半からの回を予約して伺いました。
8席だけのカウンター席、岡田大将の正面の席に着席、この回はもちろん満席でした。
最初に飲み物を聞かれます。このお店はソムリエさんもいるのでペアリングを。つまみや握りにピッタリなワインや日本酒を提供してくれます。
「おまかせコース」(29,700円)
「ペアリング」(11,000円)。
最初は「シャンパン」から。
「鰻の桜蒸し」・・道明寺の中に蒸した鰻が。春らしい一品からスタート。
「而今」
「毛蟹と馬糞雲丹のお寿司」・・シャリの上にたっぷりの毛蟹と馬糞雲丹、2品目から贅沢の極みで感激!!雲丹が口の中でとろけるー(笑)
「白ワイン(ペイシェンス)」
「桜鱒」・・玉ねぎ醤油で。紫蘇の花も散らされています。
「めじまぐろ」・・海苔醤油とわさびで。
「にごり酒(ボー・ミッシェル)」
「あん肝」・・とても濃厚!!海苔の天ぷらにのせながら楽しみます。
「白ワイン(バンジャマン・ルルー)」
「蒸しあわび 肝のソース」・・とても柔らか!あわびを食べたあとは、シャリ玉を入れてくれます。上から再びソースが。
「甘鯛の松笠揚げ」・・サクサクに揚った松笠揚げに帆立と菊の出汁。帆立の旨味が甘鯛を引き立てます。
「お口直しの緑茶」
「新たけのこ」・・柔らかくなるように火入れされていますね。香りもいい。
大将が握り用のネタを切り、並べ始めました。つまみも満足出来ましたし、握りも楽しみです。新生姜のガリが置かれます。
「神の穂「作」」
「春子鯛の昆布締め」・・柔らかな口当たり、豊かな旨味が楽しめます。
「あおりいか」・・口の中で甘みが広がります。
「赤ワイン(ドメーヌ ロレンゾン)」
「中とろ」・・とろける甘みを感じますね。
「大とろ」・・キレイなサシ、ふんわりと口どけのよい食感。
「みむろ杉」
「小肌」・・酢〆がとても丁寧、2日間かけているそう。シャリの上には「海老のおぼろ」も。
「鯵」・・鹿児島産の鯵、「時期的に少し早めかな?」と思ったけど。結構脂がのっていました。
「赤武」
「のどぐろ」・・大将が炙った「のどぐろ」を見せてくれました。シャリとともに海苔に置かれて、手渡しです。大将のポーズ、バッチリきまっていますね!!皮目の脂が溶けだし美味しい状態での提供。
「穴子」・・タレが絶妙。
「お椀」
「玉子」・・黒糖と、ほうじ茶を使った玉子、上品な甘さです。
以上でコースが終了しました。
お店は、5月20日で丸5年が経つとのこと。店名の「在」は、「在郷」という言葉が語源で、心の帰る場所をつくっていくという思いから付けられたようです。
大将をはじめお店の方たちは皆さんが親切ですし、温かみのある鮨店。鮨・つまみとそれに合う酒、とても満足出来ました!
