静岡駅北口の繁華街から少しだけ外れた住宅街の一角に当店はある。気を付けて見ていないと通り過ごしそうなファサードだが、裏を返せば自信の表れでもある。
果たして、当店では想像以上に素晴らしい体験をすることができた。
店内は変形テーブル席と逆L字型カウンター席(入り隅に欠きがあるから厳密には違うが)。
入店し名前を告げるとカウンター席に案内いただき、上着を預かってもらった。
この流れが自然で、ホールスタッフ(もしかしたらお弟子さんか)の素晴らしさを感じた。
今日は7,000円11品のコースを予め注文している。
ここで大将(当店では店長と称している)が現れてご挨拶。
まず飲み物。メニューを見ると日本酒のところに気になるものが。
市内海側にあり南アルプスの伏流水が湧き出るところにある酒蔵(萩錦酒造)と大将が協働して造った酒だと言う。
まずこれから始めよう(以後の日本酒も萩錦酒造のもの)。
クリアだが旨い酒の味がする。
提供された前菜は正に日本酒のアテだ。
これを先頭に料理は続くが、一つ一つに大将のこだわりがあり、そのこだわりを説明くださる。
もろみや麹の見事な使い方、八十八夜過ぎの今だからできる茶葉のお浸しなど。
すべてが日本酒のためにあると言うのは言い過ぎか。
〆の蕎麦は通常3種だが、それぞれ少量で良いからと言うと4種ご用意いただいた。
中では昆布水で蕎麦をいただいたことが印象に残る。
2階は宴会の際使用しサービスは忙しくなるとか。
今日は1階のみで、他のお客は3組。すべてが蕎麦前を楽しんではいなかった。
静岡に来たらまた立ち寄りたいお店だ。
