『ミシュランガイド新潟2020』で二つ星を獲得した、全国でも屈指のガストロノミーフレンチ。
シェフ自らが狩猟や釣り、農業までをこなし、新潟の豊かな自然を一皿に凝縮させたような至高の体験を提供してくれます。
今回のコースにも真鴨、熊、猪といったジビエが登場。緻密に火入れされたジビエに臭みは皆無で、野性の力強さと気品が同居しています。
食材は佐渡のボタンエビや日本海の鮮魚、さらには自家菜園の野菜に至るまで、調味料の一滴まで新潟産にこだわる徹底した地産地消。カトラリーや器も燕三条の工芸品が使われており、細部にまで「新潟」が息づいています。
まさにガストロノミストがわざわざ訪れるべき、新潟が誇る名店です。
