今回は、はなれではなくカウンター席で、圧巻の3時間コースでした。
特に赤雲丹、まぐろの赤身、トロ、ボタンエビ、北寄貝が美味しかったです!
赤雲丹はこれまで食べたどの雲丹よりも濃厚で素晴らしかったです。他では仕入れできない大粒な赤雲丹でした。
まぐろ、トロはお盆で豊洲市場が閉まっている中、熟成されたネタで、難波さん曰く「皆さん、この瞬間世界で一番美味しいまぐろを食べてますよ。」というように濃厚で旨味が溢れる力強い味でした。
牡丹海老、ねっとりと旨味の塊でした。他のネタとだいぶ違う生ならではの個性を楽しめます。
北寄貝は、前回感動したネタ。なんばの温度管理がネタの旨味を引き出しています。今回もやっぱり素晴らしかったです。
難波さんがお寿司は日々勉強でもっと美味くなると言ってましたが、前回十分に美味しかったのに今回はより美味しくなっていて感動しました!
ハッキリとレベルの違いがわかるネタの仕入れと管理、丁寧な仕事、値段は張りますが、それに見合う価値があるお寿司です。
またこのお寿司を食べるために仕事を頑張りたいと思えます。
