地元愛媛で取れる魚を中心とし、ここでしか味わえないものが多数あります。鮮度が抜群で、一品一品目の前で仕上げられる料理は圧巻。季節ごとに伺いたいお店です。料理の説明も丁寧でより食欲をそそられます。
美味しく頂けるよう様々な工夫がなされているのが見て取れます。癖のある魚も食べられたり、鮎の鮨があったりと珍しいものもあります。鮑は体液のみで蒸し上げられており、肝ソースで食べるリゾットは最高。鮎も丸々調理されていたり虎魚の出汁が出てきたりと、食材そのものの味を生かし、食材を大切にされている思いが伝わりました。
現地の食材と、素材を生かした味付けが上手くマッチしたお店です。地方ならでは、現地の強みを感じました。
