道後温泉と松山市内中心街に1泊ずつホテルを取って久しぶりに鮨いのさんにお伺いさせていただきました。
本梭子魚の焼きからスタートした本日のコース。
まずはビールから始めてというより日本酒スタートが懸命なラインナップですので、お酒好きな方は日本酒から始めると楽しめます。
煮蛸の芳醇な香りと上品な甘さに本山葵の清涼感、ほどよい柔らかさに仕上げており咀嚼する事で真蛸そのものの風味を感じられるもの。それはそれは長い余韻を楽しめる最高の逸品であり口内が幸せです。
淡いピンク色に輝く白甘鯛は包丁が入るたびにショリショリという音が聞こえてくるので、あの食感と身の甘さを想像しながら我慢できないほどの脳汁を出して待ち、西日本では比較的珍しい半熟いくらも味わうことが出来ました。酒飲みにはたまらない構成ですので、お酒は猪野親方にお任せでお願いいたしました。

二種類のシャリと温度を使い分けておられます。
春子鯛、小鰭、新烏賊、石鯛漬け、真鯵、トロ、赤雲丹、才巻海老、穴子、玉子焼。
というラインナップでした。
酢洗いした春子鯛から始まった握り。寝かせてしっとりした小鰭からパツッという食感を楽しめる新烏賊、脂ののった石鯛と続き、酸味から白身の脂の甘さを更に感じる構成。特に小鰭、石鯛は絶品でした。
費用対効果がとても高く本当にリーズナブル。
美味しいなんてのはもちろんですが、ドリンクは驚くほど安い。特に日本酒の種類は酒屋か?と思わせるほど置いてありますので気になる方は日本酒用の別メニューをいただきましょう。
お弟子さんの育成や独立など業界への貢献、愛媛の水産資源の価値向上、酒蔵との取組み、などなど地元を盛り上げるという視点で見ても素晴らしい。
そういえばサービス対応のスタッフさんが変わったような気がしました。もし私の気のせいで変わってないのだとしたら明らかに素晴らしい成長です。
