ついに訪れたかった春日市の菊鮨。
ミシュラン一つ星ということもあり、期待を胸に暖簾をくぐると、凛とした空気が漂う静かな空間。
樹齢100年の銀杏のカウンターが印象的で、
スタッフが穏やかな表情で迎えてくれました。
この日はおまかせコースを注文。
最初に供された小鉢から繊細な仕事が光ります。
握りに入ると、赤酢を効かせたシャリが特徴的で、酸味と旨味のバランスが絶妙。
特に印象に残ったのは「対馬産の赤身漬け」。
しっかり熟成された旨味が口の中でじんわり広がり、赤酢のシャリとの相性も抜群。
さらに、コハダの締め加減が絶妙で、シャリと一体となる食感に感動しました!
ウニは北海道産のムラサキウニを使用していて、甘みが際立つ逸品。最後にいただいた玉子焼きは、ふわっとしたカステラのような食感で、職人技が光る締めくくりでした。
一つひとつの仕事が丁寧で、まさに「その日一番旨い鮨を握る」という店のモットーが伝わる内容。
