【3日目:昼】何故か朝からスイーツを食べ、お昼は『乙女寿司』さんにお伺いしました。こちらは名店ひしめく石川県の食べログ寿司ランキングで常にトップ5に入る人気店!「ミシュランガイド富山石川(金沢)特別版2016」 1つ星獲得店であり、私が金沢に転勤して初めて訪れたお寿司屋さん!その時の感動はいまでも鮮明に憶えています♪
当時からかなり人気店で、例え一人でも飛び込みでは殆ど入れなかったのですが、15年の『北陸新幹線開通』による金沢観光ブーム、16年の『ミシュラン』1つ星獲得により、地元はもとより、首都圏、更には海外からも注目され、とんでもなく予約が取りにくいお店になりました…。特に香箱蟹が食べられる11月上旬~12月末迄の期間は尋常ではない混雑ぶり!
今回予約を5か月前にしたのですが、その時点で結構埋まってました…。予約は初回来店の方は2ヶ月先までの受付ですが、何回か通っている場合や、来店時にはその限りではないので、次の予約をして帰る方や1年先の予約をする方も多いそう。この店とお鮨が気に入って、リピーターになる人が本当に多いのです。
お店の場所は、金沢の飲食店が軒を連ねる木倉町。小さいながらも手入れをされたお庭と石畳のアプローチで、金沢らしい凛とした佇まい。店内はカウンター10席ほどと、奥に個室の小上がり席がある、落ち着いた空間。お隣の方との距離は狭く、中々こじんまりとしてます。
大将の鶴見さんは物腰柔らかく、お客様との適度な距離を保ちながらも気配りを欠かさない御方。今回は相棒の金沢寿司デビューなので、早めに開店を待ち、大将の真ん前の席を確保。軽くお話をさせてもらいつつ、大将のお仕事をじっくりと拝見。いつもながら所作が美しい♪
こちらが扱う食材は能登産が多く、お鮨のシャリは比較的甘目で柔らかめ。シャリを主張させるわけでなく、ネタに仕事を施してその良さを味合わせてくれる金澤前♪それに合わせるのは地元石川の日本酒勢!甘口の日本酒がシャリの甘みと合います♪
【ツマミ】・・・最初にツマミから行くか、握りにするかと聞かれるので、当然ツマミから!
■いか…丁寧に包丁を入れられ、ねっとり絡みつくような甘み♪胡麻の風味が非常に良い!
■ひらめ…旨味があり、ポン酢に良く合います。
■ぶり…北陸のぶりって本当に凄い!脂の甘み、とろみが素晴らしい!
■香箱蟹…この旅3回目♪身も内子・外子もしっかり入ってます。人生初の香箱蟹はこちらで頂きまてして、この美味しさに感動!それ以降、毎年こちらで食べてます♪
■甲羅酒…香箱を食べ終えたら、甲羅酒にするか聞かれます。一旦引いて日本酒を加えて甲羅ごと加熱され、蟹の旨味と香ばしさが酒に染みる大好きな一品!蟹の身は少し身を残しておくのがおススメ。あと甲羅からはどんどんお酒が漏れるので早めに飲み切りましょう♪
■のどぐろ焼き…のどぐろは炭火で香ばしく焼かれ、特製の漬け汁に漬けられて非常に甘く、旨みが豊富!正直、色々と頂いたのどぐろ料理の中で、今も最高の美味しさと思ってます♪
■鱈の白子…大将が白子の塊からその都度、部位を厳選して切り分けてくれますので、筋も無く滑らかで旨い!
■白子のすりながし…上記の理由でそりゃあ旨い。以上!
【握り】…頃合いを見て、大将がそろそろ握りですか?と聞いてくれます。
■甘エビ・・・北陸の甘エビって本当にねっとりとした甘味があります♪
■アラ・・・九州であらと言えばクエですが、これはアラという別の魚。北陸の高級魚です♪
■まぐろ・・・ボストンから空輸もの。脂が綺麗♪
■小肌・・・酸味は軽め。
■鯖・・・良い脂が乗ってます♪
■のどぐろ・・・のどぐろはやはり火を通すと脂の旨み・甘味が引き立ちますね。
■ずわい蟹・・・オスです。青色タグなので石川産。多分1杯2~3万円の身!美味いなあ・・・。
■雲丹・・・海苔が香ばしく、勿論雲丹も一級品。
■穴子・・・アツアツ、フワフワ!タレも秀逸です!
■バイ貝・・・相棒が食べない貝をリクエスト。食感・ミネラル感が好きです♪
■鰻・・・穴子とは違う、食感と旨みが堪りません。
■たまご
銀座でこれだけ食べたら、3万はいくかな?CPも非常に高いお店です♪多分こちらには20回以上通っていますが、いまだに飽きる事無く、いつ来ても楽しい時間を過ごさせてくれます。相棒も大満足!2回転目があるので、以前に比べてのんびりしにくくなった感じはありますが、来年も来る事は決定事項です♪
