再訪3度目約2ヶ月振りとなる。前回は5月に訪れ春の食材を堪能させてもらい、今回は夏を彩るコース料理を求めて期待が弾む。コースはこれまで同様に注文させてもらった。ワクワクしながらの提供された料理は次の通り。

先ずはヒラメのカルパッチョは適度な酢味のさっぱり感とライスの調和が絶妙で一口目から圧倒されてしまった。続くコーンスープは円やかながらとても甘く、フォアグラと頂くことで旨味が最高潮に達する。夏食材のハモのフリットは表面サクッサクながらハモの旨味がしっかり。何といってもソースが絶妙だった。そして今回の極みは冷製カッペリーニだろう。ビジュアル素晴らしく、甘海老と雲丹が和えられた極みの一品!その後のラビオリやもも肉のローストまで今回も全ての料理が絶品で正に芸術的美味しさを堪能することができた。次回は秋の食材を求めて再訪したいと思っている。
