グルメな知人から美味しいお寿司屋さんの
お誘いを受け、「鮨 在」さんへ
伺ってきました。
お店は広尾駅から徒歩5分ほど。
エレベーターをでビルの5Fまで上がり、
暖簾とは反対側の扉を開けると、
落ち着いたL字カウンターが広がります。
この日はメインカウンターで、
優しげな大将の丁寧な接客とともに、
おまかせコースを堪能しました。

・料理
全体を通して「優しさ」が感じられる、
穏やかな味わいのお料理。
淡く上品な煎り酒、繊細なお出汁、
そして煮切の柔らかさが特に印象的で、
ひと口ごとに心がほどけていくよう。
コースの途中に登場する岩もずくや
小肌は、他の品に比べて酸味がやや強め。
その酸味がアクセントとなり、
食欲を心地よく刺激してくれます。
お寿司は酸味が穏やかな赤酢のシャリ、
優しい煮切り、そして旨味のしっかり
としたネタが重なり合い、口の中が
幸福感で満たされるような味わい。
味わうたびに自然と笑顔がこぼれる、
そんな握りの数々でした。
お寿司屋さんでありながら、懐石料理を
思わせるような品格と繊細さを感じる
コース。上品で美味しく、記憶に残る
ひとときでした。
・お酒
今回はペアリングをいただきました。
つまみには一杯ずつ、握りには2品に一杯
という贅沢な構成。
一杯ごとに料理との相性を詳しく
説明してくれるため、ペアリングの魅力を
実感しながら食事を楽しめました。
料理とお酒が見事にマッチしており、
かなり満足度の高いペアリングでした。
・雰囲気
落ち着いたL字カウンターに優しげな
大将と丁寧な接客。
空間の静けさと料理の優しさが響き合い、
心地よい時間が流れます。
食事をしながら穏やかな気持ちになれる、
ホッとできるお店でした。
■総評
「優しさ」が感じられる穏やかな味わいで
懐石のような品格と、寿司ならではの
旨味が重なり、とても美味しい。
素晴らしいペアリングと丁寧な接客で
特別な時間を過ごすことができました。
