ある料理人さんが天ぷら屋さんにわざわざ行かない理由として、職人の技が分かりにくいから、といっていました。野菜や海鮮など、食材の力が強ければ、天ぷらのクオリティはある程度はきまる、と。
いや、ほんとか?と銀座にある超有名天ぷら店に行った時に思いました。全然違うじゃないかと。
今回初めて伺った深町さんでもまた衝撃のてんぷらをいただくことができました。
カウンター9席とテーブル席が二つ。インバウンド客がとても多い。そして一人客の割合も3割くらい。
天ぷらはまず車海老のあしから。
そして、車海老が2本。レア部分も楽しめ火入れが絶妙。一本めのおすすめは塩とのこと。甘味を感じることができてうまい!!次は天つゆで。
銀杏は初物。これも素晴らしい。
青森産のとうもろこしは甘味と旨味、食べ応えすべて素晴らしい。
そして、きす。続いて万願寺とうがらしは京都のもの。肉厚の万願寺とうがらしと天ぷらの相性が最高。
めごちは天つゆで。
私的にナンバーワンは茨城のひかりれんこんでした。半分は塩、半分は天つゆがおすすめとのこと。食感がとにかく素晴らしい。もう一つ食べたくなりました。そしてアスパラ。
あなごはご飯と別添えか穴子天丼も可能とのこと。
穴子天丼をチョイスしました。赤だし美味しいです。
追加で食べたい気持ちもありましたが、この時点で満腹。そして仕事の合間でもあったため、時間的にも限界でした。
いやしかし、素晴らしい。また伺います。
