サブレ生地に唐辛子の完熟(辛くない)
→最初にふさわしくコースに期待を膨らませてくれるようなトップ
二品目 栗のスープ(ほうれん草と豚の頬肉)
→アツアツのグラスで何とも言えない味。
三品目 仔羊のミルクのババロア(ユリネ、マカデミアナッツ)
→グランメゾン東京で見た、アレ!メインは塩とオリーブとのことでしょっぱさが強く白ワインが進む!もちろんババロアも濃厚で美味しい!
四品目 ナスと白レバーのプレッツェ(カカオチップ)
→何とも言えない組み合わせで新感覚の味。白レバーはもちろんのことカカオチップがあることによってさらにおいしさが増す。
五品目 クスクスと銀杏/ジロール茸/ムール貝
→クスクスはパスタの一種。ムール貝が小粒だがしっかり味を出してて美味しい
六品目 穴熊のソース/鳩のレバー
→臭みなく美味しい!

→甘鯛皮がパリパリ、身がしっとりで最高の火入れ。またソースも斬新な組み合わせで美味しい
