「鮨 縁(えにし)」は、岡山駅から徒歩15分の繁華街を抜けた閑静な一角に佇む、予約困難な人気鮨店です。
この日は金曜日の18時00分に予約し、1人で訪れました。
店内は肩肘張らず、ほどよい緊張感の中にも温かさがある雰囲気。客席はカウンター8席のみで、大将との距離の近さが魅力です。

季節を感じる約20品が、心地よい流れで次々と登場。岡山の食材を巧みに取り入れ、伝統と創意がバランスよく融合している。
印象的だったのは天草産の「赤ウニ」。手巻きと小丼で贅沢に味わえ、濃厚なのにしつこくなく、上品な甘みが口のなかに"ふわっと"広がりました。
「ママカリのにぎり」は、岡山らしい一貫。脂がしっかりとのっていながら、丁寧な下処理で小骨は全く気にならず、素材の旨味が際立っていました。
また、「マグロの赤身漬けにぎり」は、口に入れた瞬間に香りが立ち、ねっとりとした舌触りが印象的。醤油の風味と赤酢のシャリが見事に調和しています。
大将をはじめスタッフの方々は皆、物腰が柔らかく丁寧な接客。凛とした空気の中にも温もりを感じられ、心地よい時間を過ごせました。
