モダンフレンチのペアリングディナー」️

素晴らしいコースでした
シュヴァリエさんは自社の天然地下蔵を
持っていて、お店で扱うワインは全て自社で
フランスから直輸入して天然地下蔵で
保管しています
フランスの単一農家のブドウだけで
作る元詰めワインのみを輸入している拘り具合も
素晴らしいですよね
乾杯はロゼスパークリングと
ノンアルのスパークリング
アミューズは冷製ガスパッチョで、
甘海老にオクラや蓴菜、ブルーチーズを使った
トマトのガスパッチョは夏らしく
さっぱりしているのに甘海老やブルーチーズで
コクが増していてオクラや蓴菜のネバネバが
食欲を増してくれます
お次の鮎のパン・クルートに合わせるのは
イタリアのブラッドオレンジと
辛口ジンジャーエールを合わせた
ノンアルカクテルはハーブが入っていて
さっぱりで物凄く好きでした
鮎のパン・クルートはパッションフルーツの
タルタルとキウイを合わせていて、
本当はスイカなのですが私が好きじゃなくて
キウイに変えて頂きました
パン・クルートはサックサクで、
パッションフルーツの酸味と食感がよく合う
徳島県産の鱧のポワレはコリアンダーや
唐辛子のソースに粒マスタードを合わせていて
スパイシーさや辛味の中に感じる
マスタードの酸味が絶妙で口の中が楽しい
白桃を合わせてフルーティに仕上げているのも
好感度高いです
合わせるワインはリースリングと
ノンアルはワイサートラウベンモストという
ワイン用のぶどうジュースにナツメグを
ふりかけて飲むとほんのり苦味と甘い香りが
ポワレのソースと相性抜群
鴨のコンフィはこの日のメニューの中で
一番好きで、じゃがいもとベーコンを合わせて
コンテチーズを挟んだテリーヌは
赤ワインビネガーのソースと
合わせるのが最高でした
コンテチーズがとろ〜っと
出て来るのが幸せ
甘鯛の鱗焼きはサックサクで動画に音も
入れたので聞いてみてください
南フランス風マリニエールは
ムール貝をベースにエシャロットやキノコを
合わせていて風味豊かで香ばしい
お次のお肉に合わせるペアリングは、
ノンアルなのにまさかのデキャンタージュ
乾杯で飲んだノンアルスパークリングを
デキャンタージュして頂けたのは感動しました
お肉は茨城県常陸牛のトモサンカクのもも肉で
寝かせた白ワインのソースに実山椒と
赤ワインを煮詰めて作ったソースを合わせていて
夏野菜が添えられているのが嬉しい️
お肉は火入れ具合が完璧で、レアっぽいのに
しっかり火が通っていてしっとり
パルフェは苺とバニラのアイスクリームに
求肥とあんこ、レアチーズ、苺のピューレ、
ミントのジュレが合わせていて
酸味と爽やかさのバランスが絶妙
ベリーやレアチーズ、求肥大好きな私には
どストライクでした
コーヒーと紅茶、ハーブティーから選べたので
ハーブティーにしたのですが、
ストロベリーリーフ、ラズベリーリーフ、
カモミールティーを合わせた優しい甘味が
身に沁みました
