10月~12月は上海蟹コースです♪
私が頂いたコース内容は
◆上海ガニのワンタン入り頂湯…ディンタンは豚のすね肉・金華ハム・干し貝柱・名古屋コーチンの親鳥からとったスープ!
◆冷菜二種(三重県産真鯛・伊勢海老)…真鯛はカシューナッツと共に刻みクラゲ&青唐辛子&ニラのソースで頂きました♪ 伊勢エビは豆板醤醤油で和えられておりました!
◆祖父江の銀杏とマコモダケの春巻き…青山椒を付け頂くとほんのり爽やかになります♪
◆群馬県産のプレミアム加藤ポークの焼き豚とクレソン…焦げのアクセントと甘味が絶妙な焼き豚!
◆茶碗蒸し…上湯で作った餡に上海ガニのほぐし身を乗せた茶碗蒸し!
◆上海ガニの紹興酒漬け&焼売と餃子…小越龍山の10年物で漬けた上海蟹。焼売と餃子は上海蟹の内子とお味噌を乗せて頂きました♪
◆長崎の剣先イカ・黄ニラ・ゆりねのシンプルな塩炒め…月光(ゆりね)の甘味が印象的!
◆宮城県気仙沼モウカザメのふかひれ…豆板醤・生姜にんにくを使った餡をふかひれ・金華ハム・もやしで頂きました♪
◆北京ダック…宇宙一旨いと思っている北京ダック!
◆富田林海老芋とサーロイン…トロケル旨さのサーロイン!
◆麻婆豆腐と土鍋ご飯…定番ですな!
◆汁そば…上品な醤油ベースの上湯スープ♪

料理・雰囲気・サービス全てが最高の眞善美!
2年ぶりでしたが前回の感動を超えた料理とおもてなしでした♪
いつものテンションでレビューできませぬ!
本当に感動と感激のコース料理でした♪
最低年一通いたいお店ですな(*´▽`*)
予約困難店なので・・・また運を呼び寄せたいと思います!
