すべてがスペシャリテと言える完成度でしたが、
とりわけカラスミは衝撃的!
一年塩漬け、二ヶ月干し、半年味噌漬け――
その手間が生む旨みと香りの深さ。
噛むたびにプチプチと粒立ちが感じられ、
口中に広がる芳醇な余韻は唯一無二。
そして後半の肉鮨。おおぼら和牛、
田島牛…脂の甘みと赤酢プレミアムのシャリが
見事に溶け合い、旨みの波が幾重にも押し寄せる。
“山と海”、“鉄板と酢”の融合!
まさに味覚の競演でした♪
すべてが美味しすぎて本当に
幸せなご褒美ディナーでした!
