星ヶ丘「アルキオーネ」などで修練を積んだのち

特に印象的だったのは
・白トリュフのタヤリンは、香りが立ち
少し遅れて旨味の壁が押し寄せる、これぞ名作
体験!
・セイコ蟹とキャビアはほのかな甘味と
海の層が重なり味覚の景色が変わる瞬間が
ありました!
・蝦夷鹿は火入れが神でした。芯温の表現が
美しく、噛むほど静かに旨味が開きました♪
視覚も味も香りも、もはや “食で奏でる舞台作品”!
これは芸術です!

白トリュフコースとかけまして、
名画の鑑賞と説きます。
そのこころは――どちらも“香りと余韻が
心の中に残り続けます”。
