フレンチの歴史を紐とくと、クラシカルなフレンチスタイルに対し、1900年後半、スペインで新しい勢力のエルブジ派が発生。エルブジ派はエスプーマなど新しくかつ細かい仕事を持ち込み、料理を煌びやか、かつ華やかにした。この流行の波を受けて、クラシカルなフレンチの担い手は同様に負けじと小手先に走り、フランスのフレンチは着地点を見失って混迷を極める。この混迷の果てに現在のフランスフレンチが形をなしていますが、本場でも本当にクラシカルなフレンチは中々少なくなってきているのではと思います。
あるとすれば、それはビストロになってしまい、レストラン感が薄い。星を取るような店は、盛り付けの華美さ、驚きを提供する必要があるため、星を目指す店が多い結果、今日の形となっているのでしょう。
前置きが長くなりましたが、そんな中で島国日本で非常にクラシカルなフレンチが楽しめるお店があります。その内の1つが当店です。
美味いものを腹一杯、食べきれないほど食べる、それが料理の基本であり最大のもてなし。そんなシェフの声が聞こえそうな料理は質実剛健、重厚骨太。

ウニのコンソメゼリー寄せ、ランド産フォアグラは必食。仔羊の岩塩包みが無かったので今回はイチボを。次回は絶対に頼みます。
