場所はやや分かりにくいので、GoogleMapで「田山花袋終焉の地」を目指して行きましょう。
新宿駅から徒歩15分程、都心なのにまるで山小屋の様な雰囲気です。
パンはカンパーニュと食パン、酵母入りビスケットのみ。
シンプルで潔い。
今回はイレギュラーのライ麦入りカンパーニュ1/2と食パン1本、ビスケット2枚購入。
その後住宅街を抜け、明治神宮の宝物殿前広場でひと休み。
早速ビスケットを頬張りました。
KATAIビスケットというだけあって、硬めでバリバリガリガリ噛めば噛むほど全粒粉の旨味と塩味、粗製糖の甘味がほんのり感じられます。
素朴な美味しさで何枚でも食べれそう。
ちなみに硬いだけでなく、田山花袋の「花袋」にも掛けてるそうです。
パンは翌日になりましたが、カンパーニュも食パンも、薪釜パン特有の香ばしく力強いクラスト。
中はしっとりムッチリしていて、爽やかな酸味と小麦の旨み。
食パンはバターと粗製糖が入っているので、コクとほんのり甘みもあり、毎朝食べたいと思える美味しさ。
渋谷の住宅街にご自身で薪釜を作り、酵母を起こし、こだわりの無農薬小麦を挽き、手でこね、薪をくべながら温度調整し、力強いパンを焼く。
想像を絶する大変な作業にただただ脱帽です。
